The Colors of Independence: Chile en Nogada

No dish is more symbolic of Mexican Independence than Chile en Nogada. This patriotic plate features a roasted Poblano pepper stuffed with a savory-sweet pork picadillo, accented with dried fruits, almonds, and pine nuts. The dish is draped in a delicate walnut-sherry cream sauce known as Nogada, and sprinkled with brilliant red pomegranate seeds. The green of the pepper, the white of the sauce, and the red of the pomegranate seeds proudly display the colors of the Mexican flag.
